Lazy White Chicken Chili (E)

A Drive Thru Sue favorite, this quick meal is a crowd pleaser for the whole family.
Total Time 30 minutes mins
- 1 lb 96% Lean Ground Chicken or Turkey Breast
- 2 15 oz cans White Beans (Cannelini/Great Northern)
- 1 small can Corn kernels If using frozen, about half a cup
- 16 oz Organic Chicken Broth
- 1 can Diced Tomatoes
- 1 packet Chili Seasoning Mix (watch for additives!) One clean example is Riega Organic Chili Seasoning Powder Mix
1. Brown the chicken or turkey in a large pot with enough of the broth to keep it from burning2. Blend one can of the UNDRAINED beans in a blender (I use my Nutribullet)3. Drain the other can of beans and add it to the pot once the meat is browned, along with the pureed beans, corn, tomatoes, and chili seasoning4. Add broth to your desired consistency 5. Let simmer for at least 10 minutes before serving6. We like this with a dollop of 0% plain Greek yogurt on top and a salad
